When Marc Delforge took over his father’s farm in 1989, he decided to stop growing blue-whites and pigs and plant fruit trees. Later, in 2018, when it was his turn to run the farm, his son Simon opted for viticulture and decided to mix classic and resistant varieties on old apple plots. From the outset, Simon Delforge opted for organic farming controlled by TUV-Nord Integra. The first plots have been officially certified organic since 2022, and the aim here is to produce sparkling wines.
